    If you were invited to judge the best chocolate in the world competition. What elements would you look for in the chocolate?.

    Hello there. Thanks for asking the question about chocolate. I'd be looking for a good balance of flavours and aromas - some spiciness and fruity notes would be my preference. A good crisp bite, and a firm snap when the chocolate is broken. The cocoa beans should be from an ethical source and the workers part of a fair trade operative or similar scheme :)
